Morning Glory Baked Oatmeal Bars

This month of September is also called National Better Breakfast Month so we decided to put in the best breakfasty recipe in our 'Recipe of the Week' this week,



Ingredients:


  • 1/3 cup walnuts, chopped
  • 1 tablespoon ground flax + 3 tablespoons water
  • 2 1/2 cups old fashioned oats (gluten-free if necessary)
  • 1/4 cup coconut sugar or brown sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 cup mashed very ripe bananas (2 large)
  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 cup diced apple(use a large apple and use leftovers for topping)
  • 1/2 cup shredded carrots
  • 1/4 cup dried cranberries or raisins

Method


Preheat oven to 350. Spread walnuts on a lined baking sheet. Bake 7-8 minutes. Set aside.
-Spray an 8 X 8 baking dish coated with cooking spray.
-Place flax and water in a small bowl, stir to combine. Set aside for 5 minutes to gel.
-Place 1/2 cup oats in blender or food processor. Blend until it resembles flour. Put into a large bowl and stir in remaining 2 cups oats, coconut sugar, cinnamon, salt, and walnuts.
-Mash bananas in a medium bowl. Add almond milk, applesauce, vanilla, and flax mixture. Mix well and fold in apple, carrots, and cranberries.
-Pour wet ingredients into dry ingredients and stir until just combined.
-Pour into prepared pan. Top with thin sliced apple(optional).
-Bake about 40 minutes,
-Slice into 9 pieces.

'V-J Day in Times Square' by Alfred Eisenstaedt

This week our 'Photography of the week' is the legendary photo which has a global impact and a historical value known worldwide. This is a photo taken by the epic photographer Alfred Eisenstaedt on August 14, 1945 right after the World War II ended and the declaration of the US winning over Japan. Alfred called this photo 'V-J Day in Times Square'. We chose this photo in commemorating Greta Zimmer Friedman who recently passed away in the age of 92. The kiss depicts the exhilarating expression of that soldier who realized after the war ending declaration that troops are not going to go back at war and the thrill went down to kiss. Alfred first time got this photograph published in Life Magazine.

Mutton Fry

This recipe is submitted by Rida Lodhi. She is a media writer and blogger for 'Aaj News' TV official website. She writes under lifestyle, trending and women section and occasionally shares her own trending recipes of Pakistan. These days there is a grand occasion going in Pakistan called 'Eid-ul-Azha' where a lot of people buy and sacrifice as a holy festival for either goats and cows and some camels as well so people eat beef, mutton and such like non-veg dishes. Here's one traditional recipe for Mutton Fry.



Ingredients:

  • Mutton – ½ kg (cut to pieces)
  • Red chili powder – 2 tsp + ½ tsp
  • Turmeric powder – ¼ tsp
  • Water – ¼ cup
  • Onion – half (finely chopped)
  • Crushed ginger garlic – 1 tsp
  • Garam masala powder – ¼ tsp (Garam Masala powder is a ground mixture of north and west Indian spices and can be easily found in packets. Buy at Amazon or Savory Spice)
  • Crushed black pepper – ¼ tsp
  • Curry leaves – 10 – 12
  • Salt – to taste
  • Oil – 2 – 3 tbsp

Method:


Pressure cook the cleaned mutton pieces with 2 tsp red chili powder, turmeric powder, salt and ¼ cup water till done.
Heat oil in a kadhai (pan/pot) over medium flame, add ½ tsp red chili powder and curry leaves and cook for few seconds. Add chopped onion, crushed ginger garlic and a pinch of salt and saute for a minute.
Drain the excess water (mutton stock) and add the cooked mutton to the kadhai (pan/pot) and fry it over high flame stirring continuously for about 5 – 6 minutes or till it is fried completely. Add garam masala powder and black pepper and combine well. Serve hot.

The painting has a sailor in it who is standing next to an estuary on a summer day. Its got a historical mark with the worth value and time its consumed for a century over. Its being sold at an auction held in Crewkerne, a town in England. The painting is sold by Stephen Mallet town council and the date of auction in October 8, 2016. So hello! all wealthy and rich art lovers and classic and modern home designers. The painting is worth in collection.

We decided to pick a more adventurous and thrilling kind of a gadget for our 'Gadget of the Week'. Its Parrot Disco. Yes you heard it right and No! its not a dancing or a disco gadget. 'Clash of the Storms' by Camelia Czuchnicki

We decided to go a little bold a little out of the context 'photography of the week' this time. The talk of town is the weather photography contest in the UK where there were 800 world's famous photographers submitted their entries. The contest was by Weather Photo Organization. The finalists have been announced and we choose Camelia Czuchnicki epic weather photography which blew so many minds with the amazing capture hence becoming 'weather photographer of the year'.  Check out 'Clash of the Storms' below. She choose two storm cells in New Mexico, US. Its a rare sight which only lasts a few seconds to be exact and here a fast curvy whoosh storm is meeting a sprouting bubbly one like a final battle is about to begin. Splendorous! Ain't it?

There is lovely and funny Ellen DeGeneres and then her lovely and funny voice which is for Dory in the famous 'Finding Nemo'. Now comes her voice again with a pop bang in the strikingly lovely and an every kid collection theme movie 'Finding Dory'. Its a story of a Royal blue regal Tang fish which you know from the previous movie Finding Nemo who has a very short-term memory problem but the theme is that no matter what and how long she keeps living a story she always gets flashbacks of her loving parents. Sweet and Barbecued Tangy Chicken

This recipe is dedicated to the recent event of Labour day and the recipe photo originally shared by the contributor Carl Tremblay on Labour day as well. On any weekend or a public holiday one always enjoy a good barbecue so we selected 'Sweet and Barbecued Tangy Chicken' for our 'recipe of the week' section. The recipe is from the cookbook of America's finest cooks team of America's Test Kitchen. Ingredients (For the Chicken):

  • 2 Tbsp. dark brown sugar
  • 4 1/2 tsp. kosher salt
  • 1 1/2 tsp. onion powder
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • 6 lbs. bone-in chicken pieces (split breasts and/or leg quarters), trimmed


Ingredients (For the Sauce):


  • 1 cup ketchup
  • 5 Tbsp. molasses
  • 3 Tbsp. cider vinegar
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. Dijon mustard
  • 1/4 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1/3 cup grated onion
  • 1 garlic clove, minced
  • 1 tsp. chili powder
  • 1/4 tsp. cayenne pepper
  • 1 large disposable aluminum roasting pan (if using charcoal) or 2 disposable aluminum pie plates (if using gas)


Method:

Combine sugar, salt, onion powder, garlic powder, paprika and cayenne in bowl. Arrange chicken on rimmed baking sheet and sprinkle both sides evenly with spice rub. Cover with plastic wrap and refrigerate for at least 6 hours or up to 24 hours.

Whisk ketchup, molasses, vinegar, Worcestershire, mustard and pepper together in bowl. Heat oil in medium saucepan over medium heat until shimmering. Add onion and garlic; cook until onion is softened, 2 to 4 minutes. Add chili powder and cayenne and cook until fragrant, about 30 seconds. Whisk in ketchup mixture and bring to boil. Reduce heat to medium-low and simmer gently for 5 minutes. Set aside 2/3 cup sauce to baste chicken and reserve remaining sauce for serving. (Sauce can be refrigerated for up to 1 week.)

For a charcoal grill: Open bottom vent halfway and place disposable pan filled with 3 cups water on 1 side of grill. Light large chimney starter filled with charcoal briquettes (6 quarts). When top coals are partially covered with ash, pour evenly over other half of grill (opposite disposable pan). Set cooking grate in place, cover, and open lid vent halfway. Heat grill until hot, about 5 minutes.

For a gas grill: Place 2 disposable pie plates, each filled with 1 1/2 cups water, directly on 1 burner of gas grill (opposite primary burner). Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Turn primary burner to medium-high and turn off other burner(s). (Adjust primary burner as needed to maintain grill temperature of 325 to 350 degrees.)

No matter if using a gas or charcoal grill, clean and oil cooking grate. Place chicken, skin side down, over hotter part of grill and cook until browned and blistered in spots, 2 to 5 minutes. Flip chicken and cook until second side is browned, 4 to 6 minutes. Move chicken to cooler part and brush both sides with 1/3 cup sauce. Arrange chicken, skin side up, with leg quarters closest to fire and breasts farthest away. Cover (positioning lid vent over chicken if using charcoal) and cook for 25 minutes.

Brush both sides of chicken with remaining 1/3 cup sauce and continue to cook, covered, until breasts register 160 degrees and leg quarters register 175 degrees, 25 to 35 minutes longer. Serve, passing reserved sauce separately. Serves 6 to 8.

Terry Redlin's last painting was unveiled that day and and it was an emotional day for everyone present at the art center that day. Terry passed away on the April 24, 2016. His last struggled days suffering from Alzheimer's have been really boosting a lot of morals. The painting is so catchy, lifelike and different from what he had painted all his life. He painted his last masterpiece 'Evening on the Ice' and it brilliance feels you and touches you deeply. Highrise Pumpkin Cupcakes

People who know Angela Liddon know her love for desserts. She mostly does a gluten free and dairy free cooking and runs a very successful blog containing all the very natural and plant-based recipes. This recipe was a thumbs up recipe for the taste-testers. Try these delicious muffin typed cupcakes for your weekend tea times.

Highrise Pumpkin cupcakes


Ingredients (Cupcakes):


  • 2 ¼ cups (560 ml) all-purpose flour
  • ½ cup (125 ml) plus 2 tbsp (30 ml) white sugar
  • 2 tsp (10 ml) baking powder
  • 2 tsp (10 ml) ground cinnamon
  • 1 ½ tsp (7 ml) freshly grated or ground nutmeg
  • ½ tsp (2 ml) baking soda
  • ½ tsp (2 ml) fine sea salt
  • ¼ tsp (1 ml) ground allspice
  • 1/8 tsp (0.5 ml) ground cloves
  • ¾ cup (175 ml) pumpkin puree
  • 1 cup (250 ml) unsweetened almond milk
  • ¼ cup (60 ml) pure maple syrup
  • ¼ cup (60 ml) grape seed oil
  • 1 tbsp (15 ml) freshly squeezed lemon juice
  • 2 tsp (10 ml) pure vanilla extract


Ingredients (Frosting):


  • ¾ cup (175 ml) vegan butter
  • 1 ½ cups (375 ml) icing sugar
  • 1 to 3 tsp (5 to 15 ml) almond milk
  • ½ tsp (2 ml) pure vanilla extract
  • ½ tsp (2 ml) ground cinnamon
  • ¼ tsp (1 ml) freshly grated or ground nutmeg
  • Pinch of fine sea salt


Method:

For the cupcakes, in a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, baking soda, salt, allspice and cloves.

In a medium bowl, whisk together pumpkin puree, almond milk, maple syrup, oil, lemon juice and vanilla until smooth.

Add wet pumpkin mixture to dry mixture and stir just until combined, being careful not to over-mix. Batter will be thick like muffin batter.

Scoop batter into greased muffin tins. Using a retractable ice cream scoop works well.

Bake 25 to 30 minutes at 350F (180C) until a toothpick inserted into center of cupcake comes out clean and cake springs back when touched.

Cool in pan about 10 minutes before transferring to cooling rack.

For the frosting, in large bowl using electric beaters beat butter about 30 seconds until smooth.

Add sugar, 1 tsp (5 ml) of the almond milk, vanilla, cinnamon, nutmeg and salt. Beat, starting at low speed then increasing to medium, until smooth and fluffy, about 2 minutes. Add more milk, a teaspoon at a time, if too thick, or additional sugar by the tablespoon if too thin, until it reaches ideal spreading consistency.

When cupcakes are completely cooled, top with frosting.

Store in airtight container in fridge up to five days. To freeze, place on uncovered plate in freezer and once frosting has hardened wrap individually with plastic wrap and return to freezer in airtight container up to a month.

Makes 12 cupcakes.

You can interpret quite a few meanings of a type of street life but its also a deep question from a kid vs an adult look. They are kind of asking eyes captured in the photo.

Don't Breathe (2016)

Today we chose 'Don't Breathe' for this 'Movie of the Week' section. The movie is basically a horror genre and not the kind of any supernatural or evil entity or ghost dwellings. Its a story of three common thugs who decides to rob a blind man in his home when they come to know he lives all alone. The movie's base plot reminds me of  'Hard Candy' and 'Housebound' where all of a sudden the the victim becomes an unimaginable hunter and twists the good to bad. The three friends who decides to their theft plan turned to a survival one faces some crucial enlightenment but what would become of them is a spoiler. As for recommendation its going epic in box offices right now. Enjoy the movie trailer. Its chilly enough for a horror genre.
