Chicken Grilled Sate with Ginger Peanut Sauce

Sate are just scrumptious and widely popular side dish or even taken by some people as appetizers. Recently its got a trend for home and family BBQ nights as a munch snacks for killing time while your main course are on barbecue grills. A lot of diet conscious folks can have them as a full course meal as well taken in roasted or steamed vegetables.

Chicken Grilled Sate

Ingredients (Chicken Sate): 

  • 2 pounds boneless chicken breast, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1 teaspoon finely chopped or grated fresh ginger
  • 2 tablespoons dark or roasted sesame oil
  • 1 recipe Ginger Peanut Sauce (following)
Method:

If using wooden skewers, soak in water until needed. Move chicken breast pieces to a sealable plastic bag.
Add soy sauce, ginger and oil. Marinate 30 minutes or up to 8 hours.

When ready to grill, thread the chicken onto small pre-soaked wooden skewers and move to a hot grill or a rimmed baking sheet 6 inches from the hot broiler. Grill or broil 3 to 4 minutes; turn and cook the second side another 2 to 4 minutes, until the chicken registers 165 degrees on an instant-read thermometer. Remove from grill or broiler. Serve hot on skewers, or remove chicken from skewers to a serving bowl and serve with toothpicks. Serve with Ginger Peanut Sauce for dipping.

Ingredients (Ginger Peanut Sauce): 

  • 1 cup creamy peanut butter
  • 1 tablespoon finely chopped or grated fresh ginger
  • 1/4 cup fresh lemon juice
  • 1 tablespoon soy sauce
  • 1 to 4 tablespoons water
Method:
Combine the peanut butter, ginger, lemon juice, soy sauce and water in a food processor or blender. Puree until smooth. Add water as desired to thin sauce. Serve at room temperature

She was awarded the honor of “Grande Dame” for Les Dames d’ Escoffier. She considers it her highest honor as it is from women who have excelled in the food industry. She was also named the 2013 Woman of the Year from the French Master Chefs of America, and in 2015 was named to the James Beard Who’s Who in America.
